Beef Stroganoff ~ Quick and Delicious

This is one of my favorite go-to meals for a weeknight.  But it's delicious enough to serve if you've got company coming.  Give it a try and let me know what you think! 

Beef Stroganoff

serves 4

Ingredients

    • 1 lb sirloin steak, or strip steaks
    • 2 tablespoons olive oil
    • 1 onion, chopped
    • 8 ounces mushrooms, sliced
    • 1 large clove garlic,  crushed 
    • 1/2 cup chicken broth
    • 1/2 cup cooking red wine (or Marsala) 
    • 1 tablespoon parsley, chopped ( may substitute 1 t. dried parsley)
    • 1 cup sour cream
    • Freshly ground black pepper, to taste
    • Sea salt, to taste 

Directions

  1.  Heat oil in large heavy skillet until very hot but not smoking.  Brown steaks in the heavy skillet, about 2 minutes each sides. Remove beef from pan and keep warm. It's important to remove the beef as soon as it's browned - don't worry about cooking through, because it will cook through when returned to the sauce.
  2. Saute onions, mushrooms, and garlic. (You can use the pan in which you cooked the steak).  Cover if necessary to keep pan from drying out. When mushrooms and onion are tender, deglaze pan with chicken broth and wine. Reduce heat to low. Add pepper and parsley. Stir, and taste sauce for salt - you probably won't need any due to the salt in the other ingredients. 
  3. While the mushrooms are cooking, slice the steak into strips about 1/2" thick. Return beef to skillet, and stir to combine. Heat through over medium-low heat. 
  4. Place sour cream in a small bowl, and add 3 T. of the hot pan sauce, one tablespoon at a time. This warms and thins the cream so it doesn't curdle when added to the pan. Meanwhile, the sauce in the pan should have reduced a bit. 
  5. Add the sour cream mixture to the pan, and stir to combine. The sauce will look a bit "grainy" at this point - just increase the heat and reduce a little, and it will look creamy again.
  6. Serve over rice or noodles.  OR serve over my White Bean Puree.

Easy & Delicious White Bean Puree

Stew season is upon us, and this is the perfect side dish for sopping up all of the delicious gravies and broth. If you're getting bored of mashed potatoes or rice, you have to give this a try ~ it's deliciously creamy!  To serve, put the puree in the bottom of a large bowl and top with your favorite stew. 

White Bean Puree

Ingredients

    • 2 (400 g) cans cannellini beans, rinsed,drained
    • 1 cup chicken stock
    • 4 cloves garlic, quartered
    • 1-2 tablespoon lemon juice
    • 2 tablespoons olive oil
    • Sea Salt (to taste) 

Directions

  1. Combine beans and stock in a medium saucepan, bring to a boil, and then reduce to a low simmer.
  2. Cover and simmer for 10 minutes.
  3. Add the garlic, cover and simmer for 10 more minutes
  4.  Uncover and if needs be, simmer stirring occasionally about 10 mins or until most of the liquid is absorbed. (see photo below)
  5. Blend with remaining ingredients, until you have a smooth puree. 
  6. Add salt to taste.
 *Tip ~ I like to leave a little liquid in the bottom of the pan so that that puree isn't too thick. 


For an appetizer or a snack, make a thicker puree, and simmer until all of the water is absorbed, blend until smooth, and serve on crostini, or crusty bread. 

Want some fun add-ins? Got it! Just stir in one or more of the following: 

-finely chop some fresh rosemary
-a teaspoon of grated lemon zest
-sauteed finely chopped shallots
-thinly sliced, sauteed mushrooms
-thinly sliced, sauteed leeks

Afterwards, I wrote happy thoughts. and just drew on the tablet.  It felt good to take a few minutes out of my day, to just play.

Potential Health Risks that Can Be Caused by a Dirty Home


                                                                                    




The home is meant to be a safe haven; a place where both parents and their kids can take refuge from the dirt, grime and infections of the outside world. It’s a place where people are meant to get rid of all germs and get clean. Unfortunately, this is not always the case.

People who live in dirty homes don’t often realize just how negatively it can impact their health. For the adult, maybe not so much. But for the children, this is definitely a very big issue. This is why you must attempt and commit to keeping your home ultraclean.

A very clean home is one that is disease-free, great to live in and most importantly, one that protects its occupants, that said, the following are some of the potential health risks that can be caused by a dirty home:

Attracts Rodents and Other Insects
If you want to attract rodents and insects like cockroaches, nothing works faster than leaving piles of dirt of having a largely unkempt home. A dirty home calls out to rodents and other insects such as bed bugs, ticks, and even snakes if you live in an area where they are abundant.
These creatures are attracted to such homes because of the promise of food. If all they had to do was go in the house and eat, then maybe it wouldn’t be so bad. But, rats, reptiles and insects are well known vectors if diseases.
Rodents and other insects can be anywhere around and in your home, as well as outside. You can find anything from roaches in the kitchen if food isn’t thrown out properly to snakes in gutters with all the leaves that haven’t been cleaned out.
Exposing yourself and your children to all such creatures makes you vulnerable and prone to illnesses and worse still, death. For example, snakes –unless non-poisonous- can end up biting you at night when you’re asleep; the result of which can be death.
Rodents can cause diseases like the bubonic plague, Weil’s Disease, rat bite fever, Lassa fever, leptospirosis, salmonellosis, tularemia and hantavirus pulmonary syndrome. Almost all of these diseases are fatal if you don’t get medical help on time.
It is important to maintain a clean environment for your and your family’s health. If you’re overwhelmed with getting started, you might want to hire professionals at first, such as a gutter expert, like the ones at Aerotech, a personal organizer, and or house cleaner.

Mold Growth
Mold is often caused by the prolonged presence of moisture in the home among other things. While, not all molds are considered toxigenic (capable of producing toxins), you wouldn’t want to wait to find out if the one in your home is bad for you or not.
Dirty homes are usually synonymous with poor care and attention. This means that there could be leaky pipes all over the place, resulting in moisture being trapped in the walls and under the carpets, thus providing an enabling environment for the growth and proliferation of the mold spores.
Mold that produces mycotoxins are usually dangerous to the health and can cause respiratory distress, trigger asthma in asthmatic patients, cause hayfever like symptoms and pneumonitis in people already predisposed to it. This is not good at all.

Increased Presence of Allergens and Dust
If you are allergic to dust, pollen and aerosol, then a dirty environment at home is definitely counterproductive and will impact your health negatively. Sure, there will always be allergens and dust in the home. There’s nothing one can do about that.
The only thing is you must make an effort to minimize their volume or abundance in the house. Otherwise, you’re basically inviting asthma, allergies, the flu and a bunch of other conditions. The major causes of these is the dust in your carpets and rugs. They are excellent for concealing and trapping dirt, allergens, and pollens. You may need to get an expert to come in and clean the carpets annually, so that all you have to do is run the vacuum over the carpets weekly.

Fish Patties with Spicy Mayonnaise

Toward the end of summer, I get bored with grilled food. Do you? If so, this is a

 quick and delicious dinner that you can make in no time, so that your kitchen

 doesn't get over-heated. 





Fish Patties with Spicy Mayonnaise


Ingredients:

    For the Fish Patties

    • 2 lbs boneless white fish, chopped
    • 2 garlic cloves, chopped
    • 2 tablespoons fresh ginger, grated
    • 1 tablespoon sugar
    • 2 shallots, chopped
    • 1 small fresh red chili, chopped
    • 1 egg
    • 1/3 cup unsalted peanuts, chopped

    For the Spicy Mayonnaise

    • 1 cup mayonnaise
    • 1 shallot, finely chopped
    • 3 teaspoons red curry paste
    • 2-3 tablespoons fresh coriander leaves, chopped
    • 1 tablespoon lime juice
    • 1 teaspoon sugar

Directions:

  1. Process the fish through the egg until smooth.
  2. Transfer into a bowl and stir in the peanuts.
  3. Roll rounded tablespoons of the mixture into balls and flatten slightly into patties.
  4. Deep fry in hot oil in batches until browned and cooked through. Drain on paper towels if you wish.
  5. Meanwhile, make the mayonnaise: mix the mayo, shallot, curry paste, chopped coriander, lime juice and 1 tsp of sugar. Make sure it's mixed well and chill if desired until the fish patties are cooked.
Serve with a big salad with an Asian dressing and you're good to go!

Shabby Chic a Mirror

Have you ever used Urban Dictionary rather than Wikipedia? Well, ya should. (Let me warn you, it's hilarious, but it's not always for the faint of heart.) 

Anyway, I decided to look up "Shabby Chick" to see exactly what it means.  I know, everyone knows what it means, but I wanted a definition.

According to Wikipedia "shabby chic" means: furniture and furnishings that are either chosen for their appearance of age and signs of wear and tear, or new items that are distressed to achieve the appearance of an antique.

However, if you look on Urban Dictionary, you'll see the following definition of "shabby chic": 
  • A "style" invented by paint manufacturers to promote painting things then rubbing most of it back off.
  • People with no money who don't mind living with old, crap, battered furniture.

Regardless of the definition, and blatant sarcasm on Urban Dictionary, I like it. And fortuitously, I had a boring mirror that needed some personality. So being a person with no money who doesn't mind living with old, crap, beat up furniture, I gave the mirror a coat of primer, and a coat of paint.


Once the paint was dry, I went over the mirror with my palm sander and with steel wool to distress it. I then whacked the wood frame with a hammer in a couple of places to add some dents dimension. I didn't hit the wood too hard, because, well, I was working on a mirror.  (I've already had 7 years of bad luck and don't want any more!) 

I dusted the mirror down, and then used E6000 glue to affix some glass beads.  Once the mirror was ready for a photo, look who turned up. Came around the corner at the exact second I snapped a photo!

Turn Solar Lights Into Garden Lamps

Solar lamps look cute lining a sidewalk or edging a garden.  But did you ever pull them out of the hard dirt and the stake part pulls right off the lamp part? That happened to me, and I realized I could use just the light tops to make outdoor lamps for my patio or my porch.

If you want to make one, run down to the nearest thrift store, or check your attic, for a sturdy lamp.  I wanted something fairly heavy to stand up the the invariable summer thunderstorms and winds, so I bought two brass based lamps.

Next I took the guts out of the lamp and put it back together.  I painted the lamp bases with Rustoleum spray paint in yellow, but you could paint it any color you like, just make sure to use outdoor paint. 

Then pull the stake out of the solar lamp and glue it on the lamp base.  (I used E6000 glue). You need to let the glue dry for a day or so. 

Once good and dry, pop them outside to sunbathe, and enjoy them once the sun goes down.

(Or spend three nights wondering why they're not lighting up, and then realize you forgot to pull the tabs out of the lights.)

DIY Pedestal Tray

I have a lot of silver trays.  Seriously, piles of them.  This is one: 


It's so cute, but clearly needs some serious elbow grease. That sounds a little like hard work doesn't it? Yep it does, so instead, I decided to turn it into a pedestal, and took a trip to Home Depot and bought a can of spray paint. 

All I did was give the tray a good wash with warm soapy water and let it dry (for 5 days ~ but one hour may suffice). 

I took a tea light holder and glued it to the bottom of the tray with E6000.


Then I gave the new pedestal two coats of yellow paint and primer-in-one spray paint.

(Sure, it probably ruined any value of the tray, but it's so cute now.

Not sure if I'll use it for fruit, or for holding my rings when I'm washing my hands.  


Cuz I really did have to wash my hands.
